These Loaded Egg Muffins/ Egg Bites are keto friendly, low carb and super easy to make. They are loaded with salami, pepperoni and veggies.
Ingredients
- ¼ cup onions
- ¼ cup tomatoes
- 1/2 a jalapeno
- 8 eggs
- 1 tsp salt
- 1 tsp pepper
- ⅛ cup of pepperoni
- 12 slices of salami
- ¼ cup of mozzarella
- ¼ cup of cheddar
Directions
Chop onions, tomatoes, jalapenos, and pepperoni into bite sized pieces. Add to a greased skillet over medium heat and saute for 1-2 minutes. Remove veggies and pepperoni from heat and let cool for 2-3 minutes.
Crack all eggs into a bowl, and add cooled veggies and pepperoni, along with cheese.
Place salami slices down at the bottom of each muffin pan. Fill each slot 3/4 with egg mixture top with additional jalapenos and bake at 400° for 20 minutes
