Wussup Towners. I was playing around with these eggs this morning and decided to fill these onion rings with eggs. Basically using the onion ring as the cup/holder for the eggs. Sort of like the egg muffins that we previously made. Try it out and let me know what you think.
Ingredients
- 1/2 in thick cut rings of an onion
- 1 egg per onion ring
- pinch of salt
- pinch of pepper
- jalapenos – optional
Directions
Cut the onion rings thick enough to hold a whole egg (if some egg spills out that’s fine). Crack an egg into each onion ring and season with a pinch of salt and pepper. Cook egg on medium to medium-low heat for 2 minutes per side.
