Spicy Eggs

Wussup Towners. Today we made some spicy scrambled eggs with onions, sweet peppers, and jalapenos. The price of eggs is getting ridiculous. Lately, I’ve been playing around with these liquid eggs mixing them in with whole eggs to stretch them and I’m starting to like the convenience of them. I can’t taste the difference. Side note I’m still trying to work on this cast iron skillet daily. Sit back relaxing and enjoy the sounds of cooking.

Ingredients

  • 2 eggs
  • ⅛ cup egg beaters
  • 2 mini sweet peppers
  • 1 jalapeño
  • a handful of baby spinach
  • ⅛ cup cheddar cheese
  • ⅛ cup yellow onions
  • salt to taste
  • pepper to taste
  • ½ tbsp butter
  • 1 tbsp olive oil

Directions

in a skillet saute onions jalapeno and sweet peppers over medium heat for one minute. Add butter and oil. Crack in eggs and pour in the liquid egg beaters. scramble eggs for 2 minutes. Once cooked to your level of doneness top with baby spinach and cheddar cheese. Mix together for 30 seconds or until cheese melts and spinach welts and serve
