Pepperoni Egg Bites Stuffed With Salmon And Hamburger | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. For breakfast today we made Loaded Egg Bites that were stuffed with salmon, hamburger, mushrooms, jalapeno, spinach, and cheese. All wrapped in a pepperoni shell. These breakfast bites came out amazing.

Ingredients

  • 12 slices of pepperoni
  • 9 eggs
  • 2 tbsp heavy whipping cream

The filling is optional we used

  • ΒΌ cup mushrooms
  • 1 jalapeno
  • 1 handful of spinach
  • β…› cup shredded cheese
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp garlic powder
  • β…› cup cooked salmon
  • β…› cup cooked hamburger patty

Directions

In a skillet over medium heat add mushrooms, and jalapenos and saute for 1 minute. Next, add spinach and cook for an additional minute, and set the pan aside to cool. In a large bowl add eggs, heavy whipping cream, pepper, and garlic powder. Mix to combine. Next, add the mushrooms, jalapeno, and spinach along with the cheese to the eggs and combine. (It may be easier to just add the mixed veggies and cheese directly to the muffin tin pan on top of the pepperoni and then pour the egg mixture over top). Spray the muffin pan with cooking spray and place pepperoni slices into each muffin tin pushing them down to the bottom. Pour egg mixture into each muffin tin and top with additional veggies or meats. We added salmon and hamburger to different muffins. Bake in a preheated oven at 350 degrees for 15-20 minutes. Let cool and enjoy.
