How To Make A Cauliflower Breakfast Casserole | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. For breakfast today my wife is showing us How To Make A Cauliflower Breakfast Casserole. This breakfast casserole is very simple to make. The hardest part was cooking the sausage and chopping the jalapeno and onions. After that, you just have to add everything to an oven-safe dish and toss it in the oven.

Ingredients

  • ½ onion
  • 3 jalapenos
  • 1 lb Spicy Breakfast Sausage
  • 12 oz cauliflower
  • 2 oz cream cheese
  • 6 large eggs
  • ¼ cup cheddar cheese.
  • 2 tsp Cooking With Thatown2 All Purpose Seasoning
  • salt to taste
  • pepper to taste

Start off by preheating your oven to 350 degrees. Chop up the onions and jalapenos into small diced sized pieces. Heat a skillet over medium-high heat and add the spicy breakfast sausage. While the sausage is cooking add the cauliflower to the microwave to steam for 4 minutes. Once the cauliflower is out of the microwave remove any remaining liquid and set aside. After 2-3 minutes of the sausage, cooking add in the onions and jalapenos to soften up while the sausage finishes cooking. Spray your baking dish with cooking spray and add the cauliflower to the dish. Season with salt and pepper. Layer the cooked sausage and veggies on top of the cauliflower. In another bowl add softened cream cheese and eggs and mix together. If your cream cheese isn’t fully softened down worry about it. The chunks of cream cheese tasted great in the final dish. Season the eggs with all-purpose seasoning and once the sausage and veggies have cooled a bit pour the eggs over top of it. Top the casserole with cheese and pop it in the preheated oven for 20 minutes.
