Jerk Chicken | Grilled | BBQ | Keto | Cooking With Thatown2

Wussup Towners. You guys have to try this Jerk Chicken recipe. This chicken came out so flavorful and juicy. We allowed the chicken to soak up as much flavor as possible by letting it sit in the jerk sauce marinade overnight. We also were able to get that additional boost in flavor that only charcoal can provide by grilling the chicken low and slow until it reached an internal temperature of 165 degrees. If you do not want to grill it also can be baked in the oven. This Jerk Chicken was AMAZING. Enjoy!

Ingredients

  • 5 lbs leg quarters
  • 1/2 onion
  • 4 chopped green onions
  • 1 tbs garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp ground allspice
  • 1 tbs brown sugar substitute (swerve)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp dried thyme
  • 1 tsp cumin
  • ¾ tsp marjoram
  • 1 tbs vinegar
  • 1 tbs extra virgin olive oil
  • 1 tbs lemon juice
  • ¼ tsp orange extract
  • 1 tbs soy sauce
  • 1 tsp coriander
  • 3 scotch bonnet peppers
  • 1 bunch of cilantro

Directions

For our marinade and seasoning of the chicken, we added the following ingredients to a blender. Yellow onion, green onions, garlic, salt, pepper, ground allspice, brown sugar substitute, cinnamon, nutmeg, thyme, cumin, marjoram, vinegar, extra virgin olive oil, lemon juice, orange extract, soy sauce, coriander, scotch bonnet peppers, and cilantro. Blended this all up until smooth. Next, we used gloves to rub the jerk marinade into all parts of the chicken and under the skin. Feel free to cut slits into the chicken to allow the marinade to penetrate the meat. Let sit in the marinade for at least an hour, overnight is preferred. Place chicken on the grill and cook until an internal temperature of 165 degrees.
