Crack Chicken | Instant Pot | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. If you’ve never had crack chicken before you definitely need to try out this recipe. It only takes 15 minutes to make in the instant pot and the end result is a creamy, cheesy, delicious chicken dish that can be used for a dip, appetizer, or even in a salad. This crack chicken definitely will not last long. As always this dish is keto friendly and low carb. I hope you guys enjoy this super easy to make one pot meal. Enjoy.

Ingredients

  • 3 lbs of Chicken Thighs
  • 1 tbs Cajun seasoning
  • 1 ½ tbs ranch seasoning
  • salt to taste
  • pepper to taste
  • 1 cup cheese
  • 4 oz cream cheese
  • ½ cup of water
  • ½ onion
  • ½ tomato

Add the chicken thighs to a pressure cooker or instant pot. Season with Cajun and ranch seasoning, and add water, cream cheese, and onions to the pot. Close the lid, and cook for 15 mins. Allow the instant pot to naturally release pressure for 12-15 mins. Open the lid and remove all the chicken. Turn the instant pot onto sauté mode. Cook the remaining liquid for 5 mins to allow the liquid to thicken and reduce. Add cheese, tomatoes, salt, and pepper to taste. Add the chicken back to the sauce, combine and serve.
