Coconut Curry Chicken | Cooking with Thatown2

How to make a simple easy creamy Coconut Curry Chicken is a meal that can be made within 30 minutes and was served over cauliflower rice. This meal is keto friendly but the recipe can also be followed for non keto users by using regular sugar and adding vegetables such as sweet potatoes to the meal and serving over rice. Enjoy.

Ingredients

  • 2 lbs of diced chicken
  • 3 cloves of garlic
  • ½ cup of onions
  • 1 tbs of curry powder
  • 1 tsp of turmeric
  • 1 tsp coriander
  • 1 tsp of ginger
  • 1 tbs of tomato paste
  • 1 can of coconut milk
  • ½ cup of water
  • 1 tbs of butter
  • dash of salt
  • dash of pepper
  • sugar substituent to taste for sweetness level
  • optional cilantro to garnish

Add olive oil to a large skillet over medium heat. Saute onions for 2 minutes. Add in diced boneless, skinless chicken and cook for 5 minutes to brown all sides. Add in garlic, curry powder, Tumeric, coriander, and ginger cook chicken for an additional minute. Next add tomato paste, water, and coconut milk. Mix together well. Cook chicken for an additional 5 minutes or until sauce thickens. Taste and season with salt and sugar substitute to taste. Serve with cauliflower rice.
