Loaded Fried Egg Omelet | Keto | How to | Low Carb | Cooking With Thatown2

Wussup Towners. For breakfast today we made a Fried Egg Omelet/Omelette. We filled the omelet with ham, peppers, spinach, and cheese. As always we kept this breakfast keto friendly and low carb. It is super simple to make and big enough to feed two. Enjoy!

Ingredients

  • 4 eggs
  • 1/4 cup chopped ham
  • 2 mini sweet peppers
  • 1/2 cup spinach
  • 1/8 cup cheese (we mixed mozzarella and cheddar)
  • salt (to taste)
  • pepper (to taste)
  • 2 tbs olive oil

Directions
Start by chopping the ham and mini sweet peppers. Add to a skillet over medium high heat along with 1 tbs of oil to saute. Season with salt and pepper, and cook for 2-3 mins. Add in the spinach and cook for another minute once wilted turn off the heat.

In another pan heat to medium heat, add oil and eggs. Let the eggs cook for about 2 minutes to firm up, once the bottom half of the eggs have been set, flip the eggs (try not to break them if so just fill in the broken spot with any of the liquid portion of the eggs that haven’t set yet). Once flipped cook this side of the eggs for another 2 minutes until the yolks are firm and no longer runny. Flip the eggs back over and top the eggs with cheese, ham, and veggies. Serve and enjoy!
