Wussup Towners. Today I wanted some Chinese food, and we really didn’t feel like going out to a Chinese or hibachi restaurant. As you know normally at these locations they will try to load your plates up with noodles or rice, and we know that’s a no-no on the keto diet. So, we decided to make it ourselves. We whipped up some Cauliflower Fried Rice. This rice is keto friendly, low carb, and sugar free. It’s basically a bowl of vegetables so eat all you want! Enjoy.
Ingredients
1 head of cauliflower
3 tbs extra virgin olive oil
1 tsp sesame oil
1 onion
1 tbs garlic
1/2 cup peas
1/2 cup carrots
3 tbs soy sauce
1 tbs fish sauce
1 tbs ground ginger
2 tsp turmeric
salt and pepper to taste
Directions
Start with a head of cauliflower and chop it up into small florets, and place it all into a blender. Chop the cauliflower up into fine pieces to make cauliflower rice. Try not to blend it for too long to liquify it. In a Wok or large skillet over medium high heat add olive oil and sesame oil to the skillet and start sauteing the onions for 2 minutes. Next, add the garlic in and cook for 30 seconds. Next, add your peas and carrots as well as the cauliflower rice, and mix well to combine. Add all the seasonings soy sauce, fish sauce, salt, (if needed) pepper, ginger, and turmeric. Mix and cook for 4-5 minutes stirring frequently. Once the cauliflower rice has softened make a well in the middle of your cauliflower rice and add some additional oil and add in the eggs to scramble them. Once the eggs are cooked mix all ingredients together and cook for 1-2 minutes and ENJOY!
