Cauliflower Mac and Cheese Waffle | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. Here is a new spin on your regular mac and cheese recipes. This Cauliflower Mac and Cheese Waffle is keto friendly, low carb, and sugar free, and is made completely out of Cauliflower. This recipe is also for anyone who is tired of eating the same leftovers day after day during the holidays. You can follow these same cooking steps and just load your waffle iron up with cooked Mac and Cheese to reheat it. Enjoy!

Ingredients

  • 24 oz Cauliflower
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3 oz butter (softened)
  • 4 oz Cream Cheese softened
  • 2 tbs Sour Cream
  • 1 tsp Mustard Powder
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Paprika
  • ½ cup Almond Flour
  • 2 cups cheese

Directions

Mix and combine your mixture and taste to see if any additional seasonings are needed. There is no egg in here so you can taste it.

Microwave, boil, or steam your cauliflower. I steamed the cauliflower for 7 minutes in the steamable bag that they were packaged in. Once cooked, add the cauliflower to a mixing bowl. Add your salt, pepper, butter, cream cheese, sour cream, mustard, onion powder, garlic powder, paprika, and almond milk then combine all your ingredients.

Once combined you have 2 ways that you can make this.
First, after your mixture is combined scoop out ¼ cup of the mac and cheese or however big your waffle maker is. Add 1 egg, and a tablespoon on almond flour to the mixture. Combine and pour onto the waffle maker and cook for 2-3 minutes.

The second is to cook the cauliflower mac and cheese as normal basically place the cauliflower mac and cheese into a greased baking dish and top with additional cheese and bake at 350 for 25-30 minutes. once cooled and chilled place in the refrigerator and the next day once the mac and cheese mixture has solidified place it onto the waffle maker and cook for 2-3 minutes.
