Today we will show you how to make a healthy, keto friendly, low carb frittata. Frittata is an egg-based Italian dish similar to an omelet or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables.
Ingredients
- 12 medium eggs
- 2 tbs greek yogurt
- 1tsp salt
- 1 tsp pepper
- 1/4 cup tomato
- 1/4 cup onion
- 1 tsp garlic
- 10-12 pepperoni slices
- handful of spinach
- jalapenos (optional)
- top with cheese or mix in with eggs
We made a simple baked egg frittata with tomatoes, onions, pepperoni, spinach, jalapenos, and cheese. Crack all your eggs and mix in some heavy whipping cream, milk or greek yogurt add some salt and pepper and mix the egg mixture. Chop all your additional veggies and meat and combine them all into a greased baking dish. Cook for 30-40 minutes at 350 degrees. You will know that it is done with the frittata is solid and no longer jiggles if the dish is shaken.
