Today we fried up a healthy keto friendly, low carb version of fried chicken. To make these chicken nuggets we took some boneless skinless chicken tenders (using chicken breast is fine) that we soaked in pickle brine. - Ingredients
- 2 lbs of chicken
- 1 cup pickle juice
- 1 large bag of pork rinds
- 2 tbs salt
- 1 tbs pepper
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbs Italian seasoning
- 1 tbs Parmesan cheese
- 2-3 eggs
Directions
We took a bag of pork rinds and crushed them into small pieces. This can be performed in a ziploc bag or a blender or a food process. Cut the chicken into bite sized pieces, and add them to a bowl along with salt, pepper, chili powder, paprika, onion powder, garlic powder, Italian seasoning, parmesan cheese, pickle juice, pork rinds, and eggs. Mix together to coat all the chicken. Or you can use the two hand coat method of seasoning the chicken and then dipping each piece into the egg wash, then the pork rinds and fry them. until internal temp at least reaches 160. The residual heat will continue to rise to a safe zone of 165.
