Today we made a pizza completely out of eggs! Feel free to call it an omelet but this pizza was light and fluffy and able to be cut with a pizza cutter. We basically built the pizza upside down in a pan adding all the toppings into the pan first and then adding the eggs. Once you flipped the pizza all the toppings will be on top. Ingredients
- 4 eggs
- 1-2 tbs heavy whipping cream
- 8-10 pepperoni slices
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/8 cup red onions
- 1 jalapenos or serrano peppers
Directions
In a nonstick skillet add pepperoni down into the bottom of the pan over medium heat. Add red onions and jalapenos and cook for 2 minutes. Mix eggs and heavy whipping cream and pour them into the skillet season with salt and pepper. Let cook for 2-3 minutes once the sides release from the pan flip to cook for an additional 45 seconds to a minute.
