Keto Shrimp and Grits made with Cauliflower topped with shrimp bacon and onions. Healthy keto friendly low carb meal. Cheesy cauliflower grits with shrimp bacon and onions.
Ingredients
- Grits
- two 12oz bags of rice cauliflower
- 3 cups of chicken stock
- 1 cup of cheese
- ½ cup of heavy whipping cream
- 2 oz butter
- ½ of pepper
- salt to taste
- shrimp and bacon
- 1 lb of shrimp
- 2 tbs of creole seasoning
- 2 slices of bacon cut up into strips
- ¼ cup of onions
Directions
In a saucepan over medium high heat add the chicken stock to the pan. Once boiling add the cauliflower rice and continue to stir and cook for about 10 mins. Once softened add the cheese, heavy whipping cream, butter, salt, and pepper. Continue stirring once combined cover with a lid and let sit while you work on your shrimp.
Cook your bacon once 75% complete ad your onions once brown and cooked remove the bacon and onions from the pan leaving the grease in the pan. Then add your shrimp to the bacon grease. Cook the shrimp for about 2-3 mins per side once cooked add your bacon and onions back to the pan to reheat.
