Spinach Pancakes made with Blueberry. These Keto friendly, low carb, sugar free pancakes are amazing and they taste just like blueberry pancakes. You can’t even tell that there is spinach included. Enjoy!
Ingredients
- 3 eggs
- 2 oz cream cheese
- 1/4 cup greek yogurt
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract
- 2 packets of stevia
- 1/4 tsp baking soda
- big handful of spinach
- 3 tbs coconut flour
- 1/4 cup blueberries
DIrections
Combine all the ingredients eggs, cream cheese, greek yogurt, baking powder, vanilla extract, sugar substitute, baking soda, spinach, and coconut flour into a blender. Blend for 15-20 seconds until smooth. Pour batter into a frying pan over medium heat with coconut oil. add blueberries to the pancakes, once small bubbles form around the outside ring of the pancakes 45 sec to one minute. Flip them over and cook for another 30 seconds to a minute.
