Ingredients
- 2 Tablespoons coconut flour
- 1 Tablespoon of sugar substitute (I used swerve granular)
- 2 Tablespoons heavy whipping cream
- 1/4 teaspoon of baking soda
- 3/4 teaspoon of lemon extract
- 1 Tablespoon of unsalted butter
- 1 large egg
- 6-10 fresh or frozen blueberries (i used 8)
Directions
Spray a mug or small bowl with olive oil cooking spray or butter and pour all ingredients into the bowl, coconut flour, sugar substitute, heavy whipping cream, baking soda, lemon extract, unsalted butter, egg and blueberries. Mix all ingredients well, microwave on high for 2 minutes. Once out of the microwave let stand for 2 minutes cup will be very hot.
