Lemon Blueberry Mug Cake | Sugarfree | Cooking With Thatown2

Hello Towners, This 2 minute Keto Lemon Blueberry Mug Cake will definitely tackle that sweet tooth of yours. Its sugar-free, keto friendly, and low carb.

Ingredients

  • 2 Tablespoons coconut flour
  • 1 Tablespoon of sugar substitute (I used swerve granular)
  • 2 Tablespoons heavy whipping cream
  • 1/4 teaspoon of baking soda
  • 3/4 teaspoon of lemon extract
  • 1 Tablespoon of unsalted butter
  • 1 large egg
  • 6-10 fresh or frozen blueberries (i used 8)

Directions

Spray a mug or small bowl with olive oil cooking spray or butter and pour all ingredients into the bowl, coconut flour, sugar substitute, heavy whipping cream, baking soda, lemon extract, unsalted butter, egg and blueberries. Mix all ingredients well, microwave on high for 2 minutes. Once out of the microwave let stand for 2 minutes cup will be very hot.
