Scrambled Eggs Roast Beef Chimichurri Sauce | Cooking With Thatown2

Wussup Towners. Are you tired of those same plain old boring, basic eggs? Well, then you need to try out these Roast Beef Eggs with Chimichurri Sauce.

Eggs

  • 4 eggs scrambled
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 4 slices of roast beef chopped

Chimichurri sauce

  • 1 bunch of parsley
  • 1 bunch of cilantro
  • 6 whole cloves of garlic 1tsp garlic powder
  • 1tsp onion powder
  • 1 tsp pepper
  • 1/2 tsp kosher salt
  • 2 tbsp white wine vinegar
  • 3/4 cup olive oil few dashes of red pepper flakes.

Saute the roast beef in a skillet over medium heat. Mix eggs with salt and pepper add to an oiled skillet, scramble eggs for 2-3 minutes until no longer runny. Add all ingredients for the chimichurri sauce together and blend in a blender for 30 seconds. Once the eggs are finished cooking transfer to a plate and use chimichurri sauce as a dipping sauce or pour over top.
