Wussup Towners. Are you tired of those same plain old boring, basic eggs? Well, then you need to try out these Roast Beef Eggs with Chimichurri Sauce.
Eggs
- 4 eggs scrambled
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 slices of roast beef chopped
Chimichurri sauce
- 1 bunch of parsley
- 1 bunch of cilantro
- 6 whole cloves of garlic 1tsp garlic powder
- 1tsp onion powder
- 1 tsp pepper
- 1/2 tsp kosher salt
- 2 tbsp white wine vinegar
- 3/4 cup olive oil few dashes of red pepper flakes.
Saute the roast beef in a skillet over medium heat. Mix eggs with salt and pepper add to an oiled skillet, scramble eggs for 2-3 minutes until no longer runny. Add all ingredients for the chimichurri sauce together and blend in a blender for 30 seconds. Once the eggs are finished cooking transfer to a plate and use chimichurri sauce as a dipping sauce or pour over top.
