Caramel Chocolate Covered Peanuts | Keto | Low Carb | Sugar Free | Fat Bomb | Cooking With Thatown2

Wussup Towners. This one here is for you chocoholics. Today we made some Caramel Chocolate Covered Peanuts. As always we kept it keto friendly, low carb, and sugar free. We used sugar free chocolate chip cookies as well as sugar substitute to sweeten the chocolate. These caramel chocolate-covered peanuts are delicious and super easy to make. I hope this knocks out any cravings for sweets you may have.

Ingredients

  • 1 tbs coconut oil
  • 1 cup sugar free chocolate chips
  • ⅛ cup peanuts
  • Caramel Sauce:
  • 3 tbs butter
  • ⅓ cup sugar substitute
  • ⅓ cup heavy cream

Take a bowl and add the coconut oil and sugar free chocolate chips for 30 seconds. If it is not melted continue to heat for 5 seconds at a time until mixed. Then take your chocolate and pour half into the bottom of each mold. Over low heat melt the butter and then slowly add the sugar substitute and continue stirring. Once combined slowly add the heavy whipping cream and continue to stir. Once mixed add the chopped peanuts and add the caramel peanut mixture to the bottom layer of chocolate. Pour the remaining chocolate sauce over the peanuts. Place back into the freezer until hard a minimum of 30 mins.
