Mozzarella Sticks | Cauliflower Buffalo Wings | Appetizers | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. Today we made Mozzarella Sticks and Hot Lemon Pepper Cauliflower Buffalo Wings. They both came out amazing, you can barely tell that these weren’t traditional wings (besides the fact that there was no bone in the middle lol). We kept these mozzarella sticks and cauliflower buffalo wings keto friendly, and low carb by breading the wings in a mixture of pork rinds, almond flour, coconut flour, and parmesan cheese. Please enjoy.

Ingredients

  • 6 mozzarella sticks string cheese
  • 12 oz cauliflower florets
  • 4 eggs
  • 3 oz pork rinds
  • 1 tbs almond flour
  • 1 tsp coconut flour
  • 1/2 cup parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian season
  • 1 tsp chili powder
  • 1/2 stick of unsalted butter
  • 1/2 cup hot sauce
  • 2 tsp lemon pepper seasoning

Directions
To start with your breading for the wings and cheese sticks. First, crush up your pork rinds by either placing them in a Ziploc bag and smashing them with your hands or a rolling pin or placing them in a blender. Once crushed add them to a bowl and add your seasonings almond flour, coconut flour, parmesan cheese, salt, pepper, onion powder, garlic powder, Italian seasoning, and chili powder mix and combine. Next, whisk 2 eggs together and then coat your cauliflower and cheese in the egg mixture and then into the pork rind breading to coat. You may need to double coat your cheese sticks to get an even coating. Once fully coated place in the freezer for at least 20 mins to allow the breading to firm up and then you are ready to bake. to the pork rinds combine 2 eggs to use as your coating to cut your mozzarella sticks and the 2 additional eggs to coat your cauliflower florets. The mozzarella sticks were double coated to allow the breading to stick, the cauliflower did not need a double coating. Once all coated place them in the freezer for at least 20 mins or until the breading has firmed up.

Bake the cheese sticks in the oven at 375 for 8 mins remove once cheese starts to escape from the breading Bake the cauliflower at 350 for 25-30 flipping halfway through.

For the wing sauce combine your butter and hot sauce in a saucer on low to reduce for 2-3 minutes stirring constantly. Lemon Pepper was added to my sauce to make lemon pepper hot wings. Once out of the oven toss your wings in the wing sauce and serve. Enjoy!
