Cheesy Zucchini and Squash | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. This Cheesy Zucchini and Squash is keto friendly and low carb. It is very simple to make with a few ingredients. Adding the cheese brings in a different flavor profile than what you normally used to with grilled or roasted zucchini and squash. Please let me know if you’ve tried the recipe or have any questions. Ingredients

  • 2 zucchini or 1 large one
  • 2 yellow squash
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbs olive oil
  • 1/4 -1/2 cup of mozzarella cheese
  • 3 tbs Parmesan cheese

Directions

Slice your zucchini and squash into even slices. Use a mandolin if available. After chopping all the vegetables season with salt, pepper, Italian seasoning, garlic powder, and onion powder. Combine and mix together then wrap in foil and bake at 350 for 15-20 minutes. Once cooked unwrap the foil packet and spread the vegetables out along your baking sheet. Then spread out your cheese mixtures over the vegetables and pop them back in the oven under the broiler until the cheese melts and lightly browns this will take 2-3 minutes. Remove and enjoy!
