Wussup Towners. Here is our keto friendly, low carb, healthier version of garlic mashed potatoes. No, there is no potato in this recipe. It’s all cauliflower. LOL. Just follow your recipe the way you normally would but instead of using potatoes, pop in a few cauliflower florets. This recipe is super easy to make. Enjoy.
Ingredients
- 24 oz or two 12 oz bags of frozen Cauliflower
- 2 oz cream cheese
- 2 oz butter
- 3 tbs heavy whipping cream
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbs minced garlic
- 1 tbs olive oil
- 1/4 cup Parmesan cheese
- salt to taste
- pepper to taste
We started off by placing the cauliflower florets in the microwave and cooked them in the bag that they came in to steam them. Once they were cooked we added them to a blender/food processor. We seasoned it with cream cheese, butter, heavy whipping cream, onion powder, garlic powder, minced garlic, olive oil, and parmesan cheese. We blended everything together until smooth and creamy. Added them to a bowl and topped with parsley. Enjoy!
