Ingredients
- 1 stick of butter
- 1/4 cup heavy whipping cream
- 1/8 cup almond milk (after final mixing a tablespoon or more milk may be needed if the batter is too thick)
- 4 eggs
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tsp of sugar substitute
- ½ cup of coconut flour
Directions
First, add all the dry ingredients together coconut flour, sugar substitute, salt, and baking powder. Mix to remove any lumps. Next, add all the wet ingredients softened butter, heavy whipping cream, almond milk, and eggs. Mix them together and add to the dry ingredients. Pour the cornbread mix into a greased oven safe skillet or pan. Try to work quickly and do not let the coconut flour sit too long because it is very absorbent and will soak up all the liquid. If you need to add additional almond milk to the butter 1 tbsp at a time to thin it out and make the batter easier to spread into your greased pan. Bake at 400 degrees for 15-20 mins or until edges brown.
