Ingredients
- 1 lb ground sausage
- half of a medium sized onion chopped
- 1 medium sized bell pepper chopped
- 3 celery stocks chopped
- 3 cloves of garlic chopped
- 3 cups or 24 oz of riced cauliflower (i took two 12 oz bags of frozen cauliflower and chopped up with a food processor. Placed the cauliflower in a bowl and placed in the microwave for 5 minutes.
- 1 tsp salt
- 1 tsp pepper
- 1 tbs creole seasoning
- 1 cup of beef broth
- 1 tsp butter
Add sausage to a skillet over medium high heat and break up into small crumbles browning all sides cook for 3-4 minutes and remove from the skillet. Next, add butter to the skillet along with green bell peppers, onions, celery, and garlic. Saute for 2-3 minutes. Add the cooked sausage back to the skillet with the vegetables. Season with salt, pepper, and creole seasoning. Add the cooked cauliflower rice to the skillet along with the beef broth. Mix and continue cooking until all the liquid has evaporated 2-3 minutes.
