Hello Towners. How to make an easy simple creamy cheesy Cauliflower Macaroni and Cheese that is keto friendly and low carb. I literally could not tell that this was made without pasta noodles. Enjoy
Ingredients
- 24 oz Cauliflower florets
- 1 tbs Salt
- 2 tbs Chicken Bouillon
- 4 oz cream cheese
- 1 cup sour cream
- 3 oz butter
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp ground mustard
- ½ cup almond milk
- 8 oz mozzarella (save some cheese for topping)
- 8 oz cheddar (save some cheese for topping)
- 4 oz pepper jack cheese (save some cheese for topping)
Add cauliflower to a pot of water season with salt, and chicken bouillon. Boil for 10 minutes or until fork tender. Drain cauliflower and add to a large bowl. Add in cream cheese, sour cream, butter, salt, pepper, onion powder, garlic powder, ground mustard, almond milk, and half of both types of cheeses. Mix all ingredients together and add to a greased baking dish. Top with remaining cheeses and place in a preheated oven and bake at 400 degrees for 25-30 mins depending on your oven.
