Wussup Towners. For breakfast today we mixed things up a little bit and made a Breakfast Buritto filled with chorizo, cauliflower, eggs, jalapenos, and onions. We also added a cheese crust to seal the burrito. This dish was delicious and super easy to make. It literally can all be made in one pan. I hope you guys enjoy this recipe.
Note: This will make 3-4 burritos
Ingredients
- 12 oz cauliflower
- 9 oz beef chorizo
- 5 eggs
- ¼ cup onions
- 1 jalapeno
- ¼ cup cheese
- 1 tbsp salsa
- 1 tbsp sour cream
- 1 large keto friendly tortilla shell
- salt and pepper to taste
Directions
In a pan over medium heat add chopped onions, jalapenos, and beef chorizo. Cook for 4-5 minutes until the chorizo is fully cooked. While cooking the chorizo add frozen cauliflower to the microwave and steam for 5 minutes. Remove from the microwave drain the excess water and add to the chorizo. Mix together and set aside. In a second pan over medium heat add olive oil and eggs, and scramble until your desired likeness season with salt and pepper.
To build the burrito place the tortilla shell in the microwave for 15-20 seconds until pliable and layer your toppings with chorizo cauliflower mix, eggs, cheese, sour cream, and salsa. Roll the burrito. If you would like to seal the burrito place the burrito back into the skillet and cook over medium heat for 30 sec to a min on each side. Enjoy.
