Zucchini Baked Ziti | Keto | Low Carb | Cooking With Thatown2

Wussup Towners. Today we transformed the normal carb heavy Italian dish Baked Ziti into a keto friendly dish using Zucchini instead of pasta noodles. We made a low carb Zucchini Baked Ziti. This dish is keto friendly, low carb, and sugar free. I honestly do not miss not having the pasta noodles in this recipe. The Zucchini brings a different fuller texture element to this dish. Enjoy!

Ingredients

  • 2 large or 3 small zucchini sliced
  • 2 tbs kosher salt
  • 1 lbs of ground beef
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 cup chopped onions
  • 2 cups of fresh spinach
  • 1 jar of pasta sauce
  • 1 tbs tomato paste
  • 14 oz can of diced tomatoes
  • 16 oz of ricotta cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 egg
  • 1 cup of mozzarella cheese
  • 1/2 cup parmesan cheese

Directions

slice the zucchini noodles and place them on a paper towel or napkin, sprinkle salt on the zucchini and place another paper towel on top of the zucchini and let them sit for 20-30 so they can release their water.

Add the hamburger meat to a skillet over medium high heat and brown for 6-8 minutes. Add salt, pepper, and onions to the meat to season. Once the meat has browned we added the spinach and mixed it together. Once the spinach has wilted add in the pasta sauce, tomato paste and whole can of diced tomatoes. I felt like my sauce needed a bit more flavor so I added salt, garlic powder, and Italian seasoning and then cooked it down to reduce for 15 mins.

Next, to the ricotta cheese we added onion powder, garlic powder, and an egg, mix and set aside.

To start building your ziti spray your baking dish with baking spray and then lay down a layer of meat sauce, Next, add a layer of zucchini noodles, then a layer of the cheese sauce, After that continue repeating the layers until you’ve used up all your ingredients. For the final layer top the Ziti with mozzarella and parmesan cheese.

Cover with foil and bake in the oven at 350 for 45 mins. After 45 mins remove the foil and sprinkle cheddar cheese over the top and continue to bake for another 15 mins until the cheese browns on top. Once out of the oven let rest for about 20 mins before cutting.
