Chocolate Avocado Muffins this is keto friendly, low carb and sugar free. The recipe is for Chocolate Avocado Muffins but we added white chocolate chips to it to make them White Chocolate Avocado Muffins. It’s a new twist on your regular chocolate muffin recipe. Using avocado adds a creaminess to the muffins and keeps the chocolaty taste. Please try the recipe and let me know how you like it. Enjoy!
Ingredients
- 1 medium avocado
- ⅓ cup of sugar free caramel syrup
- 2 tsp vanilla extract
- ½ cup unsweetened cocoa powder
- ½ cup almond flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ cup sugar free chocolate chips
optional
- 2 tbsp. sugar free Hershey chocolate syrup
- ½ cup sugar free white chocolate chips
To start off we added almond flour, cocoa powder, baking powder, and baking soda to a bowl and mixed to get rid of any lumps. Next, we added our fresh avocado to another bowl and mashed it until smooth. To the avocado, we added caramel syrup, and vanilla extract and mixed them together. Once well combined we then added the dry ingredients to the wet and topped it off with the sugar free white and dark chocolate chips along with sugar free chocolate syrup. Gave it all a final mix and added them to a muffin tin pan lined with liners. We filled each compartment up 3/4 full and placed them in a preheated oven at 350 degrees and baked for 25-30 mins.
