Wussup Towners. We made some delicious sugar free, low carb healthy cinnamon rolls. Half were filled with the traditional cinnamon flavored seasonings, the other filled with apple pie flavored seasonings and topped with pecans. If you like your rolls more or less sweet please feel free to mix the filling together and taste before adding to adjust your sweetness level. Enjoy.
INGREDIENTS
- DOUGH:
- 1 cup almond flour
- ¼ tbs coconut flour
- 3 tsp baking powder
- 3 tsp xanthan gum
- ¼ teaspoon kosher salt
- 3 tbsp apple cider vinegar
- 2 eggs
- 1 tsp erythritol sugar substitute optional
- ¼ cup of water as needed

Mix all dry ingredients almond flour, coconut flour, baking powder, xanthan gum, salt, and sugar substitute together. Add the wet ingredients, apple cider vinegar, egg, and water. Mix together until a sticky ball form then wrap in plastic wrap for at least 15 minutes to allow to rest.
Roll out the dough between 2 sheets of parchment paper or wax paper sprayed with cooking oil
- FILLING
- 1 tbs melted butter
- ¼ cup erythritol sugar substitute
- 2 tbs cinnamon (I mixed the other half of my rolls with apple pie seasoning)
Once the dough is rolled out combine sugar substitute and cinnamon with melted butter and spread over the dough. Roll the dough up into a log and slice into pieces.
- CREAM CHEESE GLAZE
- 2 tbs soften cream cheese
- 1 tbs soften butter
- 3 tbs powdered sugar substitute (granular is fine glaze may be a bit gritty but still works)
- 2 tsp vanilla extract
- 2 tsp almond milk
- pinch kosher salt
Place the cinnamon rolls on a greased sheet to bake at 350 for 10-15 minutes or until the bottom of the rolls turns brown.
For the glaze, mix soften cream cheese, butter, sugar substitute, vanilla extract, almond milk, and salt together mix under you have a thick pourable consistency. Pour over top of the hot cinnamon rolls.
