Wussup Towners. Happy Fathers Day to all the fathers out there. Today we made breakfast, sausage, bacon, cauliflower grits, and pancakes. Then we got on the grill and cooked a corn beef brisket, chicken breasts, sirloin steaks, and a head of cabbage we also grilled some veggies and let the kids run around the yard in the sprinklers to cool off.
Cauliflower grits
- 12oz bags of rice cauliflower
- 1 1/2 cups of chicken stock
- 1/2 cup of cheese
- 1/4 cup of heavy whipping cream
- 2 oz butter
- ½ of pepper
- salt to taste
Pancakes
- 3 tbs almond flour
- 4 oz cream cheese
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 3 eggs
- pinch of salt
- Smoked Sausage
- Bacon
Corned Beef Brisket (use enough seasoning to cover all sides of your brisket)
- 2 tbs Epis (green onion and garlic)
- 1 1/2 tbs Salt
- 1 1/2 tbs Pepper
- 1 tbs Chili Powder
- 1 tbs Paprika
Chicken
- 1 tbs Epis (green onion and garlic)
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Chili Powder
- 1 tsp Paprika
- 1 tsp Italian Seasoning
Cabbage
- 2 tbs Ghee or butter
- 1 tbs Creole Seasoning
Vegetables
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 1/2 tsp Garlic Powder
- 1 tsp Lemon Pepper Seasoning
- 1/2 tsp Italian Seasoning
- 1 tsp Olive Oil
Directions
To start off the day for breakfast, we had smoked sausage, bacon, cauliflower grits, pancakes, and eggs. To make the cauliflower grits we used chopped cauliflower, chicken stock, heavy whipping cream, butter, salt, pepper, and cheese. For the pancakes almond flour, eggs, cream cheese, baking powder, vanilla extract, and salt
We removed the brisket from the package and soaked it in cold water changing out the water every two hours to remove the brine from the corned beef brisket. We soaked the brisket for a total of 12 hours and then seasoned and placed it on the grill. The meat was seasoned with epis (green onions and garlic) salt, pepper, chili powder, paprika, and Italian seasoning. The grill varied from a range of 200 to 300 degrees depending on if the coals were dying out or not. This was a 4 lb brisket which ended up taking a total of 9 hours to cook.
